Candied Maple Bacon

Is what my fairy godmother, aka Jim Gaffigan, would say. Cinderella got it all wrong. Who wants a prince when you can have candied maple bacon? Not me.

Though most men really do like bacon, so I’m assuming you can have both if you share. (Why would you?)

My brother’s friend Pete fell to the floor upon first bite.  My brother told me I ruined bacon for him. I actually think I ruined bacon for myself. I’m not upset about it.

Candied Maple Bacon

So here’s the story about this bacon. The dance company that I’m in had a show a few weeks ago and we really couldn’t eat much/didn’t want to because our costume was a sports bra and shorts.

All the dancers could talk about all day was the reception afterward and all of the cheese and cookies we could eat. At said reception, I found candied bacon on the bar next to the champagne. It was love at first sight and bite. I decided to make it for myself and of course it’s even better!

It’s a Paleo recipe because my brother enjoys a Paleo diet. I actually think the Paleo aspect makes it even more delicious. Nothing better than bacon and pure maple syrup.

RECIPE: very slightly adapted from PaleOMG

  • 2 tbs pure maple syrup
  • 1/4 cup maple sugar
  • 1/2 tsp cayenne pepper
  • 1/4 tsp paprika
  • 3/4 lb. thick cut bacon, I used uncured applewood smoked

INSTRUCTIONS:

  • Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
  • In a large bowl, combine maple syrup, maple sugar, cayenne pepper, and paprika.
  • Carefully rub mixture on bacon and place on parchment paper. Continue until all bacon is covered.
  • Bake in oven for 25-35 minutes rotating halfway through. The bacon should be crispy before you take it out. It will continue to harden when you take it out of the oven.
  • Using a pair of tongs, carefully remove bacon and lay flat on a fresh piece of foil or parchment paper to cool.
  • Serve at room temperature. It won’t last long so don’t worry about storing it 😉
