One Chocolate Cake To Rule Them All

All Lord of the Rings references aside, I’m serious.

This chocolate cake does rule them all. It is simply the best and you’ll have a hard time convincing me otherwise.

This is the chocolate cake that is made for every birthday and special occasion in my family and I’m pretty sure it has been for years. I don’t know a single person that doesn’t love it. Well that’s not entirely true because my brother is a weirdo(love you Anthony), but everyone else I know loves it.

So you should probably make it for your next special occasion….or because you really want chocolate cake(like me). AND there is truly nothing better than the frosting that accompanies it. To be honest, I really do love the cake, but I think I love the frosting more. I’m guilty of asking for just the frosting for my birthday. This really upsets my other brother because then there is no cake and I don’t share the frosting. Oh well! It’s my party, I can eat an entire bowl of frosting if I want to (sorry Pat).

RECIPE(serves 6-8): (adapted from Hershey’s Perfectly Chocolate cake)

Cake:

  • 1 cup granulated sugar
  • 3/4 cup plus 2 tbs all purpose flour
  • 1/4 cup plus 2 tbs cocoa powder
  • 3/4 tsp baking soda
  • 3/4 tsp baking powder
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 cup very hot coffee

Frosting:

  • 1 cup milk
  • 5 tbs all purpose flour
  • 1 cup vegetable shortening
  • 1 cup granulated sugar
  • 2 tsp vanilla extract

INSTRUCTIONS:

Cake:

  • Preheat oven to 350 degrees F. Grease and flour two 6 inch cake pans.
  • In a large bowl, whisk together sugar, flour, cocoa, baking powder, and baking soda.
  • Stir egg, milk, vegetable oil, and vanilla into dry mix until combined.
  • Slowly stir in hot coffee until combined.
  • Pour mixture evenly into prepared cake pans.
  • Bake in oven for 25-30 min or until inserted toothpick comes out clean.
  • Cool for 10 min. in pans. Remove from pans and cool on wire rack.

Frosting:

  • In a small sauce pan on medium heat, whisk together flour and milk into heat, stirring constantly until mixture has thickened. You want it to be about the consistency of brownie batter.
  • Take off the heat and let cool to room temperature.
  • In a stand mixer with the paddle attachment, cream shortening and sugar until fluffy. Add in vanilla and beat.
  • Add the cooled milk and flour mixture and beat until the frosting resembles whipped cream, scraping down sides when necessary.
  • Frost cooled cake and enjoy!
